Wafer thin turkey

Instructions

Toast the bread, then spread over the mustard.

To assemble the club sandwich, top one piece of toast with the spinach and red onion, followed by the turkey, gherkins and cheese.

Top with the second slice of toast, cut in half diagonally and secure each half with a cocktail stick.
