Fish works really well in salads – try this flavoursome idea

Ingredients

Green Beans

200 g, trimmed and halved

Lettuce

1 individual, Cos lettuce

Green or Brown Lentils, cooked

250 g

Cherry Tomatoes

300 g, halved and quartered

Red onion

1 small, thinly sliced

Tuna in spring water, drained

2 can(s), medium, drained

Olive Oil

1 tablespoon(s)

Lemon Juice, Fresh

15 ml

White Wine Vinegar

1 tablespoon(s)

Wholegrain Mustard

1 teaspoon(s), heaped

Garlic

1 clove(s), crushed

Honey

1 teaspoon(s), level

Instructions

  1. Boil the green beans for 3 minutes, until just tender. Drain and rinse under cold water to cool. Arrange the lettuce leaves on a serving plate. Scatter over the beans, lentils, tomatoes and onion . Flake over the drained tuna.
  2. Whisk together the oil, lemon juice, vinegar, mustard, garlic and honey. Season to taste and drizzle over the salad to serve.
