Tuna burgers with chilli lime mayo

Who doesn’t love a burger? These ones use inexpensive tinned tuna and are served with a spicy mayo that takes only a minute or so to make.


Ingredients
Breadcrumbs, fresh
40 g
Tuna in spring water, drained
1 can(s), large, drained
Spring Onions
2 medium, trimmed and sliced
Coriander, fresh
30 g, roughly chopped
Lime Juice, Fresh
1 tablespoon(s)
Reduced Fat Mayonnaise

Egg, whole, raw
1 large, raw, lightly beaten
Vegetable Oil
1 tablespoon(s)
Wholemeal bread roll
4 medium
Lettuce
4 leaf/leaves, small
Reduced Fat Mayonnaise
75 g
Sweet Chilli Sauce
2 tablespoon(s)
Lime
1 zest(s) of 1
Lime Juice, Fresh
2 tablespoon(s)
Instructions

Combine the breadcrumbs, tuna, spring onions, coriander and the lime juice in a bowl. Mix in the mayonnaise, then enough of the beaten egg to make a sticky, but not wet, mixture. Season and shape into 4 even-sized burgers. These benefit from some chilling so if you have time, put them in the fridge for 30 minutes before cooking.

To make the sweet chilli lime mayo, combine all the ingredients in a small bowl and stir to combine.

Preheat the oven to 140°C, fan 120°C, gas mark 1. Put the oil in a nonstick frying pan over a medium heat, then cook the burgers, 2 at a time, for 3-4 minutes on each side until golden. Keep all the burgers warm in the oven.

Warm or toast the rolls, then spread generously with the sweet chilli and lime mayo. Sandwich a burger in each roll with a few lettuce leaves, then serve.
