Tuna, avocado & spinach salad

Ingredients

Tuna, raw

300 g, 2 x 150g steaks

Olive Oil

1 teaspoon(s)

Cucumber

50 g, sliced

Spinach

45 g

Cherry Tomatoes

150 g, halved

Avocado

1 medium, peeled, stone removed

Parsley, fresh

4 sprig(s), fresh, chopped

Olive Oil

1 tablespoon(s)

Vinegar, All Types

1½ tablespoon(s), use cider vinegar

Red onion

¼ small, finely chopped

Chilli, green or red

½ individual, finely chopped

Garlic

½ clove(s), finely chopped

Coriander, fresh

4 sprig(s), finely chopped

Instructions

Heat a non-stick griddle pan or frying pan to medium-high. Brush the tuna steaks with the oil and season with salt and pepper. Cook for 1-2 minutes each side (depending on the thickness of your steak) for rare, then set aside to rest for 5 minutes before slicing.

Mix together the cucumber, spinach and tomatoes. Whisk together the dressing ingredients.

Dress the salad and serve with the sliced tuna and avocado.
