The addition of soya beans mean this is no ordinary tuna salad…

Ingredients

Soya Beans, cooked

100 g, frozen

Brown rice, boiled

250 g, cooked

Tuna in brine, drained

1 can(s), medium, drained

Spring Onions

1 medium, sliced thinly

Soy Sauce

2 teaspoon(s)

Lemon Juice, Fresh

25 ml

Coriander, fresh

10 sprig(s), roughly chopped

Instructions

  1. Cook the soya beans in a pan of boiling water for around 2 minutes or until tender. Drain and mix with the cooked rice in a bowl.
  2. Add the tuna, breaking it up into flakes, then stir in the spring onion, soy sauce, lemon juice and coriander. Season to taste, and serve. Or pack into a lunchbox for later. The second portion will keep well until the next day.

Notes

If you are cooking rice from scratch, use 105g dried brown rice.
