Healthy and warming, porridge for breakfast can keep you satisfied until lunch.

Ingredients

Porridge oats

120 g

Desiccated Coconut

30 g, toasted flakes

Sweetened coconut drink

500 ml, We used Alpro

Mango

1 medium, cut into chunks

Passion Fruit

2 medium, pulp

Instructions

  1. Put the porridge oats in a large pan. Add the coconut drink and 250ml water, stir well, then put over a medium heat and bring to the boil.
  2. Reduce the heat and simmer for 3-4 minutes, stirring continuously, until thick and creamy.
  3. Meanwhile, toast 2 tablespoons coconut flakes in a dry, nonstick frying pan over a medium heat for 1 minute, until golden and fragrant.
  4. Divide the porridge between 4 bowls and top with the mango chunks, the passion fruit pulp and the coconut flakes.
