Bright, comforting and comes together in 15 minutes! The bread cut-outs of these cheese toasts are perfect for dunking into the runny egg yolk.

Ingredients

Calorie controlled cooking spray

4 spray(s)

Wholemeal bread, sliced

4 slice(s), medium

Egg, whole, raw

4 large, raw

Half fat Cheddar cheese

50 g, grated

Rocket

20 g

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Place a baking tray in the oven to heat for 5 minutes.
  2. Cut a hole in the centre of each bread slice with a 6cm round biscuit cutter. Carefully remove the hot baking tray from the oven. Coat the pan with cooking spray. Arrange the bread slices and bread cut-outs on the pan then crack 1 egg into each hole. Season each egg with salt and pepper and sprinkle the cheese evenly over the bread cut-outs and the edges of the bread slices.
  3. Bake for 7-10 minutes, until the egg whites are set and yolks are cooked to desired consistency. Remove the pan from the oven and serve garnished with the rocket.
