Make up a batch of this perfect thirst-quencher - ideal for a warm summer's day.
4 medium, unwaxed
6 tablespoon(s), granulated
6 portion(s), medium, Ice cubes1 litre Sparkling water
- Use a potato peeler to pare the zest from the lemons. Make sure you only remove the yellow part as the white pith is bitter.
- Put the lemon zest into a saucepan with 500ml boiling water. Simmer gently for 10 minutes, then remove from the heat. Squeeze the lemon juice and add to the mixture. Leave until cold, then stir in the granulated sweetener.
- Share between 6 tall glasses, adding a mint sprig and two strawberry halves to each one. Top up with ice cubes and sparkling water, and serve at once.
