WW Tuna in Tomato & Herb Dressing

Calorie controlled cooking spray

Instructions

Place the wholewheat couscous in a small bowl and pour on the boiling water. Season, stir, and cover with a plate. Leave to stand and swell for 4–5 minutes while you prepare the salad vegetables

When the couscous is ready, stir in the chopped pepper, cucumber and cherry tomatoes. Tip the couscous salad into a lidded container if you’re planning to transport it, or transfer to a shallow bowl.

Top with the rocket leaves, and keep chilled. Add the tuna in tomato and herb dressing when you’re ready to eat.
