- Place the wholewheat couscous in a small bowl and pour on the boiling water. Season, stir, and cover with a plate. Leave to stand and swell for 4–5 minutes while you prepare the salad vegetables
- When the couscous is ready, stir in the chopped pepper, cucumber and cherry tomatoes. Tip the couscous salad into a lidded container if you’re planning to transport it, or transfer to a shallow bowl.
- Top with the rocket leaves, and keep chilled. Add the tuna in tomato and herb dressing when you’re ready to eat.
