Garlic

Tinned Tomatoes

Thyme, Fresh

Heat the oil in a pan over a low heat and cook the finely chopped shallot and finely sliced garlic cloves for 6-8 minutes, until soft. Stir in the chopped tomatoes and add a few sprigs fresh thyme. Press a circle of baking paper onto the surface of the tomatoes and simmer for 20 minutes, until reduced. Discard the thyme and season to taste, then purée using a stick blender. Chill until needed – you can freeze any excess sauce for up to 6 months.
