- Mix the eggs, milk and basil together, then season.
- Heat the oil in a frying pan, add the egg mixture and fry evenly for 3-4 minutes until set.
- Spread the tomato and mozzarella slices and some extra basil leaves over the omelette. Fold and season to taste. Serve with rocket on the side.
The top of the omelette should still look a little wet when you take it off the heat. That’s because the heat inside the eggs will continue cooking them after fold it. If you wait until the top looks dry, the omelette will be dry.
