Tomato & chickpea salad
Adding chickpeas to your salad will keep you fuller for longer
1 can(s), large, drained
Lemon Juice, Fresh
Red wine vinegar
1 g, 1/4 tsp
- Put the chickpeas, all the tomatoes, radishes, watercress and mint in a serving bowl.
- Combine the lemon juice, oil, vinegar, garlic and sumac in a small bowl and season to taste. Drizzle over the salad just before serving and toss to coat.
You could use baby rocket instead of watercress, if you prefer, to give a similar, peppery flavour.
