Adding chickpeas to your salad will keep you fuller for longer

Ingredients

Chickpeas, cooked

1 can(s), large, drained

Cherry Tomatoes

200 g

Tomato

3 medium

Radish

2 medium

Watercress

70 g

Mint, Fresh

14 g

Lemon Juice, Fresh

1 tablespoon(s)

Olive Oil

1 tablespoon(s)

Red wine vinegar

10 ml

Garlic

1 clove(s)

Sumac

1 g, 1/4 tsp

Instructions

  1. Put the chickpeas, all the tomatoes, radishes, watercress and mint in a serving bowl.
  2. Combine the lemon juice, oil, vinegar, garlic and sumac in a small bowl and season to taste. Drizzle over the salad just before serving and toss to coat.

Notes

You could use baby rocket instead of watercress, if you prefer, to give a similar, peppery flavour.
