Toasty porridge with spiced apple compote

Creamy porridge is topped with spiced stewed apple and yogurt. Toasting the oats first gives the porridge a lovely nutty flavour.
1 medium, peeled, cored and chopped
Lemon Juice, Fresh
Cloves, Whole or Ground
0% fat natural Greek yogurt
¼ teaspoons, level
- Put the apple in a small lidded pan with the lemon juice, a teaspoon of water and the clove and cinnamon. Cover and cook gently for 5 minutes or until the apple starts to break up (add another teaspoon of water if it starts to look dry). Cover to keep warm.
- Meanwhile, put the oats in a nonstick pan and toast them over a medium-high heat for a couple of minutes or until fragrant. Add the milk, turn the heat down and slowly bring to the boil, stirring with the handle of a wooden spoon.
- Simmer on the lowest heat, stirring often, for 8-10 minutes, or until cooked and creamy. Spoon into bowls and top with the apple compote and a trickle of cold milk around the edge. Serve with the yogurt and a sprinkle of mixed spice.
