Ingredients

Parsley, fresh

2 tablespoons, finely chopped

Coriander, fresh

2 tablespoons, finely chopped

Tarragon, fresh

4 teaspoons, finely chopped, plus extra to serve

Lemon(s)

½ zest(s) of 1, grated

Garlic

1 clove(s), crushed

Red onion(s)

½ small, finely chopped

Olive Oil

White basmati rice, dry

Instructions

  1. Combine 2 tablespoons each finely chopped fresh flat-leaf parsley and fresh coriander, 1 tablespoon finely chopped fresh tarragon, the grated zest of ½ lemon, 1 small crushed garlic clove, ½ small finely chopped red onion and ½ tablespoon olive oil in a small bowl and season to taste.
  2. Cook 200g white basmati rice to pack instructions, then stir through the dressing and serve with extra chopped fresh tarragon scattered over.
