Instructions

Preheat oven to 230°C. Line a large baking tray with aluminium foil.

Heat oil in a large nonstick frying pan over a medium-heat. Add garlic and cook, stirring for 1 minutes. Add spinach to the pan a few handfuls at a time, stirring constantly and adding more as spinach wilts. Continue cooking until all spinach is wilted. Stir in salt and pepper flakes.

Place the pizza base on a baking sheet. Spread ricotta evenly over crust. Top with spinach. Sprinkle with mozzarella and Parmesan and dot with pepperoni. Bake until cheeses are melted and just begins to brown in places, about 8 minutes. Cut into 6 slices.
