This colourful dish is full of healthy veg and topped with crushed tortilla chips and crème fraîche.

Ingredients

Calorie controlled cooking spray

Red onion

Red pepper

1 medium

Courgette

1 medium

Ground Cumin

1 tablespoon(s), level

Paprika

Chilli Powder

¼ teaspoon(s), level

Garlic

Turkey breast, skinless, raw

500 g

Tinned Tomatoes

1 can(s), large

Chicken stock cube(s)

1 cube(s), 150ml stock

Sweetcorn, tinned, drained

1 can(s), medium

Half Fat Crème Frâiche

4 tablespoon(s), level

Tortilla chips

60 g, crushed

Instructions

  1. Mist a lidded flameproof casserole dish with the cooking spray. Fry the onion, pepper and courgette over a high heat for 3 minutes, stirring.
  2. Add the spices, garlic and turkey, and cook for 2 minutes, then add the tomatoes, stock and sweetcorn. Season to taste and simmer, covered, for 20 minutes.
  3. Serve the turkey mixture ladled into bowls, topped with a spoonful of crème fraîche, a sprinkling of paprika and the crushed tortilla chips.
