Extra lean beef mince (5% fat), raw

Breadcrumbs, fresh

Coriander, fresh

Kidney Beans, cooked

In a large bowl, mix together the beef mince, breadcrumbs, 2 tablespoons coriander, the fajita spice mix and three quarters of the onion. With slightly wet hands, shape into four large patties.

Preheat the grill to medium high. Put the patties on a foil-lined grill tray and spray with the cooking spray. Cook gently under the grill for 10-12 minutes, turning halfway, until cooked through.

Meanwhile, in another small bowl, mix together the kidney beans, tomatoes, lime juice, remaining coriander and onion. Serve each person one patty with a quarter of the tomato salsa.
