Szechuan peanut noodles
Wholewheat Pasta, dry
Smooth Peanut Butter
1 tablespoon(s), heaped
⅛ teaspoon(s), level
1 medium, finely chopped
½ portion(s), medium, halved, deseeded and chopped
2 handful serving
- Cook the pasta according to the pack instructions. Drain the pasta, then rinse under cold water. Drain again.
- Meanwhile, in a small saucepan, whisk the peanut butter, hoisin, soy sauce, vinegar, oil, cayenne, and 6 tablespoons of water until smooth. Bring the mixture to a boil over medium-high heat.
- Transfer the peanut sauce to a serving bowl. Add the pasta and toss to coat. Add the pepper and cucumber and toss well to combine. Top with the spring onions.
