Sweet ginger plantains

Fried sweet plantains, or maduros, are an essential part of any Caribbean plate. Start with very ripe plantains that have black skins and only a few yellow spots. They achieve their desired crispy outer shell and tender flesh by first steaming, then broiling in the oven.


Ingredients
Calorie controlled coconut oil cooking spray
4 spray(s)
Plantain, Raw
2 medium, ripe, peeled and sliced diagonally
Ground Ginger
1 teaspoon(s), level
Ground Cinnamon
½ teaspoon(s), level

Preheat oven to 170°C. Line a rimmed baking tray with baking paper. Arrange the plantains in single layer on pan. Spray plantains with cooking spray and sprinkle with the spices and ½ tsp salt, pressing so spices adhere. Cover pan tightly with foil. Bake until plantains are tender, 20 to 25 minutes.

Remove the foil and place under the grill for 5 minutes, turning once, until charred in spots with some crispy edges. Let cool slightly. Sprinkle with salt before serving.
