Suya is a smoky, nutty, and spicy West African spice rub made with ground roasted dried peanuts, ginger, and chillies. It makes a great rub and dip for grilled meat, but it really goes well with just about anything.

Ingredients

Peanut butter powder

50 g

Ground Ginger

3 tablespoon(s), level

Vegetable stock cube

2 cube(s)

Garlic powder

1 tablespoon(s), level

Cayenne Pepper

2 teaspoon(s), level

Ground Nutmeg

½ teaspoon(s), level

Instructions

In medium frying pan, stir the peanut butter powder constantly over medium heat for 5-7 minutes, until it starts to turn deep golden brown.

Add the remaining ingredients to the pan and stir until aromatic, about 30 seconds. Let cool. Store in airtight container for up to 6 months.
