Super speedy tortilla pizza with sweet potato wedges

This tortilla pizza and sweet potato wedges combo is an ideal fake-away meal


Ingredients
Sweet potato, raw
200 g
Calorie controlled cooking spray

Tomato Purèe
2 tablespoon(s), level
WW White Wraps

Chicken breast, skinless, grilled
100 g
Sweetcorn, tinned, drained
60 g
Cherry Tomatoes
8 individual
Basil, fresh
1 teaspoon(s)
Light Mozzarella
1 portion(s), medium, grated
Black pepper

Instructions

Preheat the oven to 200°c, fan 180°c, gas mark 6. Cut the sweet potato into wedges, place on a baking tray and mist with cooking spray. Bake for 40 minutes or until golden and cooked through. Turn halfway through cooking time.

Place the tortillas on a large baking tray and spread the tomato purée thinly, all the way out to the edges.

Scatter the chicken, sweetcorn and tomatoes over each tortilla pizza, followed by the basil leaves, and cheese. Season lightly.

Place in the oven for the last 15 minutes of the wedges cooking, until the cheese is melted and bubbling and the tortilla is crisping up around the edges. Serve immediately with the wedges.
