Easy does it. That’s the mantra of these subs. For the most tender meatballs, roll them gently and minimally. If you’re feeling fancy, top the meatballs with fresh basil.


Ingredients
Turkey breast mince, raw
500 g
Breadcrumbs, fresh
60 g
Parmesan Cheese
20 g, grated
Egg, whole, raw
1 large, raw
Dried Mixed Herbs
1½ teaspoon(s)

600 g, 4 x 150g baguettes
Passata
500 g
Light Mozzarella
100 g, grated

Arrange the oven racks in the top third of the oven and preheat the oven to 200°C, fan 180°C, gas mark 6. Line 2 baking trays with baking paper.

In a large bowl, mix together the turkey mince, breadcrumbs, Parmesan, egg and the dried herbs. Season with salt and pepper. Using a dessertspoon to measure, scoop out the meat and gently shape into a small ball. Arrange the meatball on the prepared baking tray. Repeat with the remaining meat to make 32 balls.

Bake the meatballs for 10 to 15 minutes, shaking the baking trays every 5 minutes to promote even browning. While the meatballs are cooking, slice each baguette into 4 equal pieces.

Remove the meatballs from the baking trays. Transfer the bread to the trays and arrange 4 meatballs inside each piece of bread. Spoon 3 tablespoons of passata over the meatballs in each sandwich. Top each with 1 tablespoon of the grated mozzarella. Bake for 5-7 minutes, until the cheese is melted and the sandwiches are heated through.
