Ingredients

Calorie controlled cooking spray

WW Extra Trimmed Unsmoked Back Bacon

8 rasher(s), cooked, chopped

Onion(s)

1 medium, chopped finely

Garlic

2 clove(s), chopped

Red pepper(s)

2 medium, chopped

Courgette

1 medium, diced

Butter Beans, cooked

410 g, (drained)

Sweetcorn, canned, drained

200 g

Cherry Tomatoes

150 g, quartered

Chives, Fresh

3 tablespoons, finely chopped

Parsley, fresh

3 tablespoons, finely chopped

Lemon Juice, Fresh

1 ml, (juice from half a lemon)

Spinach

50 g, (baby leaves)

Hot Pepper Sauce (Tabasco)

1 splash(es), (optional)

Instructions

  1. Heat a nonstick frying pan, mist with the cooking spray, add the bacon and fry for 5 mins. Remove from the pan and set aside.
  2. Mist pan again with cooking spray, add the onion and cook for 7-8 mins.
  3. Add the garlic and cook for 2 mins. Add the peppers and courgette and cook for 10 mins. Add the butter beans and sweetcorn and cook for 5 mins.
  4. Season to taste, remove from the heat and stir in the remaining ingredients. Serve between 4 bowls, topped with the bacon and a dash of Tabasco Sauce, if using.
