Ingredients

Puy lentils, ready to eat

½ pouch(es)

Light feta cheese

25 g

Capers, in Brine

½ tablespoon(s)

Red onion

¼ small, thinly sliced

Rocket

Lemon

¼ zest(s) of 1

Lemon Juice, Fresh

1 teaspoon(s)

Olive Oil

White Wine Vinegar

Instructions

  1. In a bowl, combine the lentils, feta, capers, red onion and rocket, then gently toss to combine.
  2. In a small jug, whisk together the lemon juice with the olive oil, white wine vinegar and then season well.
  3. Drizzle the dressing all over the salad then sprinkle with the parsley and lemon zest to serve.
