A sweet, juicy tomato adds a refreshing flavour to this delicious two-bean salad.

Ingredients

Cannellini Beans, cooked

400 g, rinsed and drained

Kidney Beans, cooked

400 g, black, red or black-eye, rinsed and drained

Tomato

1 large, finely chopped

Onion

1 small, finely chopped

Celery, cooked

1 stick(s), finely chopped

White Wine Vinegar

1 tablespoon(s)

Parsley, fresh

2 tablespoon(s), chopped flat-leaf

Salt

1 pinch, to taste (optional)

Black pepper

¼ teaspoon(s), to taste (optional)

Instructions

  1. In a large bowl, combine beans, tomato, onion and celery. Gently stir in vinegar and sprinkle with parsley. Season to taste, if desired.
