790 g, 1.5kg whole chicken

- Preheat oven to 200°C, 180°C fan, gas mark 6. Place the lemon and herbs into the chicken cavity. Mist with cooking spray, and season with salt and pepper.
- Place chicken on a wire rack set over a roasting dish. Tie the legs with kitchen string and pour 250ml water into the dish. Bake, uncovered, for 1 hour 30 minutes until golden and cooked through. Cover chicken with foil and set aside to rest for 10 minutes, before serving.
