Serve these delicious filo parcels with green salad. They are perfect for a picnic!

Ingredients

Pine nuts

25 g

Mushrooms

6 large, mixed, chopped finely

Sage, fresh

6 g

Olive Oil

3 teaspoon(s)

Spinach

Ground Nutmeg

Filo Pastry

6 sheet(s), large

Calorie controlled cooking spray

Stilton

35 g, crumbled

Instructions

  1. Preheat the oven to Gas Mark 6/200°C/fan oven 180°.
  2. Spray a non stick frying pan with low fat cooking spray and heat until hot. Add the mushrooms, spring onions, thyme and garlic and cook over a high heat for 5-7 minutes. The mushrooms should release their juices, which will then evaporate. Remove from the heat.
  3. Crumble in the cheese and mix to combine. Season with freshly ground black pepper (the Stilton will make the mixture salty enough).
  4. Lay a sheet of pastry on a board, spray with low fat cooking spray and top with another sheet. Spoon a sixth of the mixture into the middle, fold over two opposites sides of pastry and roll up to make a parcel. Spray with low fat cooking spray and sprinkle with caraway seeds (if using). Repeat to make six parcels. Place on a non stick baking tray and bake for 20-25 minutes until golden.

Notes

If you don't like blue cheese, try using the same amount of Cheddar instead.
