Ingredients

Maple Syrup

3 tablespoon(s)

Whisky/Bourbon

3 tablespoon(s)

Worcestershire Sauce

2 tablespoon(s)

Paprika

2 teaspoon(s)

Orange

1 zest(s) of 1

Garlic

2 clove(s), crushed

Pork leg joint, lean, roasted

500 g, cut into large chunks

Red onion

1 small, cut into thick wedges

Parsley, fresh

5 sprig(s), fresh, to garnish

Instructions

  1. Combine all of the marinade ingredients together in a bowl. Season with salt and pepper and add the pork. Stir well to combine and leave to marinate for a minimum of 4 hours, preferably overnight.
  2. When the pork has marinated, thread the chunks on to the kebab sticks. (Note: There is 75ml of marinade left over) These can be cooked on the BBQ, or if you’re cooking inside, on a griddle pan.
  3. For the griddle, heat the pan over a medium high heat on the hob. Spray with calorie controlled spray and then cook the kebabs for around 8-10 minutes, turning them every couple of minutes. Leave to rest for 5 minutes, covered with foil.
  4. Serve the skewers garnished with the parsley.
