It’s steak and chips with a twist – as celeriac is a Zero hero

Ingredients

Celeriac, raw

2 whole, raw, skin on and cut into 2cm thick chips

Olive Oil

½ tablespoon(s)

Thyme, Fresh

3 sprig(s), leaves stripped

Rosemary, Fresh

1 sprig(s), leaves stripped

Calorie controlled cooking spray

4 spray(s)

Beef fillet steak, lean, raw

4 medium, fat trimmed

Spinach

280 g

Garlic

2 clove(s), crushed

Lemon

1 zest(s) of 1

Instructions

  1. Heat the oven to 220°C, fan 200°C, gas mark 7. Put the celeriac fries on a large roasting tray and toss with the olive oil, thyme and rosemary. Season generously and roast in the oven for 25 minutes, turning halfway.
  2. Once the fries have been in the oven for 10 minutes, set a large lidded frying pan over a medium-high heat and mist with calorie controlled cooking spray. Fry the steaks for 1 minute on each side, then remove to a plate, season well and leave to rest, loosely covered with foil.
  3. While the steaks are resting, add the spinach to the pan and stir until wilted, then add the garlic and fry for another minute. Stir in the lemon zest, season and serve with the steak and fries.

Notes

You can grill some cherry tomatoes to add to the dish, if you like
