A classic steak and onion sarnie gets an upgrade with a deliciously creamy, zesty spread made using mayonnaise, lemon and horseradish sauce.


Ingredients
Calorie controlled cooking spray

Onion
1 large, finely sliced
Beef rump steak, lean, raw
360 g, thin-cut (4 x 90g)
Reduced Fat Mayonnaise
4 tablespoon(s)
Lemon
½ zest(s) of 1, grated
Lemon Juice, Fresh
2 teaspoon(s)
Horseradish Sauce
½ tablespoon(s)
Sourdough Bread
400 g, 8 x 50g slices
Rocket
30 g

Mist a large, nonstick, heavy-based frying pan with cooking spray and cook the onion over a medium-low heat for 20-25 minutes, stirring regularly, until golden brown. Transfer to a plate and set aside.

Mist the pan with more cooking spray and increase the heat to high. Season the steaks, then fry for 1 minute each side. Transfer to a plate and set aside to rest for 2 minutes, then slice into strips.

In a small bowl, combine the mayonnaise, lemon zest and juice and the horseradish sauce. Toast the bread, then spread ½ tablespoon of the mayonnaise mixture over each slice. Top 4 slices of toast with the rocket, steak and onions, then top with the remaining toast slices. Serve immediately.
