Preheat the oven to 160°C, fan 140°C, gas mark 3. Line a baking tray with baking paper.

In a bowl, whisk together the chilli powder, ground allspice, cayenne pepper and salt.

Put the almonds, cashews, walnuts and pistachio kernels in a separate bowl, mist with cooking spray and toss to coat.Scatter over the spices and stir to coat. Mist the nuts once more with cooking spray and spread out on the tray. Bake for 20 minutes, stirring halfway, until toasted. Let cool before serving.
