- Spread the vegetables on a baking tray and mist with cooking spray. Roast according to instructions on pack. Set aside to cool.
- In a large bowl combine the prepared couscous, the roast vegetables and chickpeas. Stir together the lemon juice and zest with the harissa paste, then pour over the couscous. Mix well. Serve with an optional wedge of lemon.
