- Preheat the oven to 220°C, fan 200°C, gas mark 7. Peel the courgette into thin ribbons, using a vegetable peeler.
- Mist a griddle pan with cooking spray and griddle the courgette for 5 minutes, turning once.
- In a bowl, lightly crush the cooked peas, stir in the finely chopped red chilli and oil then season to taste.
- Spread some tomato sauce over 1 pizza base (see pizza base and tomato pizza sauce recipes). Dot the ricotta over the sauce then gently spread so it’s evenly distributed. Scatter over half the pea mixture, then top with the courgette. Scatter over the remaining peas and bake for 12-15 minutes.
