This satisfying soup makes a great winter warmer.

Ingredients

Calorie controlled cooking spray

5 spray(s)

Onion

1 medium, peeled and chopped

Celery, Raw

2 stick(s), Chopped

Garlic

2 clove(s), peeled and crushed

Chilli Powder

1 teaspoon(s), level, (optional)

Split Red Lentils, dry

50 g

Vegetable stock cube

1 cube(s), vegetable, make up to 850ml with hot water

Tomato Purèe

2 tablespoon(s), level

Tinned Tomatoes

400 g

Rosemary, Fresh

2 sprig(s), plus 2 sprigs, chopped to garnish

Instructions

  1. Heat a large saucepan, spray with low fat cooking spray and add the onion and celery. Cook stirring for 5 mins, add the garlic and chilli and cook for another 5 mins until tender and beginning to brown.
  2. Add the lentils, stock, rosemary, tomatoes and tomato puree. Bring to the boil, reduce the heat and simmer for 20 mins until the lentils are soft. Remove the rosemary.
  3. Blend the soup using a hand blender or liquidiser until smooth and season with salt and pepper.
  4. Serve hot garnished with a sprinkling of chopped rosemary.

Notes

Make double quantity, cool and freeze in portions for up to 3 months.
