Ingredients

Spring Onions

1 medium, thinly sliced

Cauliflower, Raw

150 g, broken into small florets

Garlic

1 clove(s), crushed

Root Ginger

1 tablespoon(s)

Mange-tout

100 g, or sugar snap peas, halved

Cumin seeds

¼ teaspoon(s), level

Turmeric

¼ teaspoon(s)

Chilli Powder

½ teaspoon(s), level, mild or medium

King Prawns, Raw

200 g, thawed if frozen

Cherry Tomatoes

10 individual, halved

Coriander, fresh

2 tablespoon(s), chopped

Instructions

Spray a wok or non-stick frying pan with low fat cooking spray and stir-fry the spring onions, cauliflower, garlic and ginger for 2-3 minutes. Add the mangetout or sugar snap peas and cumin seeds and stir-fry for another 2 minutes.

Stir in the turmeric and chilli powder, then add the prawns and cook for 3-4 minutes until they are pink. Add 100ml water and the tomatoes. Heat until simmering and cook gently for 2-3 minutes. Serve, garnished with chopped fresh coriander.
