This refreshing salad has a spicy kick, making it a great partner for grilled meats. Bulk it out with steamed rice or noodles for a packed lunch that’s full of flavour.

Ingredients

Cucumber

2 individual, extra large

Rice vinegar

2 tablespoon(s)

Chilli, green or red

1 individual, red, chopped

Sesame Oil

1 tablespoon(s)

Chilli flakes

½ teaspoon(s), level

Caster Sugar

2 teaspoon(s)

Spring Onions

2 medium, chopped

Instructions

  1. Using a vegetable peeler, shave ribbons from 2 large cucumbers, stopping when you get to the watery core.
  2. Whisk together the rice vinegar, chilli, sesame oil, chilli flakes and sugar.
  3. Toss with the cucumber and serve garnished with spring onion.
