Spicy cucumber salad
This refreshing salad has a spicy kick, making it a great partner for grilled meats. Bulk it out with steamed rice or noodles for a packed lunch that’s full of flavour.
2 extra large
Chilli, green or red
1 individual, red, chopped
½ teaspoon(s), level
2 medium, chopped
- Using a vegetable peeler, shave ribbons from 2 large cucumbers, stopping when you get to the watery core.
- Whisk together the rice vinegar, chilli, sesame oil, chilli flakes and sugar.
- Toss with the cucumber and serve garnished with spring onion.
