Ingredients

Olive Oil

2 teaspoon(s)

Bacon medallions, raw

60 g, unsmoked, chopped

Red onion

1 small, chopped

Tinned Tomatoes

2 can(s), large

Hot & spicy BBQ sauce

2 tablespoon(s)

Cannellini Beans, cooked

2 can(s), large, drained

Wholemeal bread, sliced

4 slice(s), thick

Instructions

Heat the oil in saucepan over a medium-high heat. Cook the bacon and onion, stirring, for 5 minutes or until the bacon is golden and the onion is softened.

Add the tomatoes, sauce and beans and bring to a boil. Reduce the heat and simmer, covered, for 15 minutes. Spoon the beans over the toast to serve.
