Give your tacos a healthy twist with spicy cod, creamy mashed avocado and plenty of sweet mango salsa. This light supper is like sunshine on a plate!

Ingredients

Calorie controlled cooking spray

Chilli Powder

¼ teaspoon(s), level

Ground Cumin

¼ teaspoon(s), level

Paprika

½ teaspoon(s), level, smoked

Ground Cinnamon

Cod, raw

500 g, skinless fillets

Cucumber

½ individual, extra large, finely chopped

Mango

½ medium, peeled, stone removed and flesh finely diced

Red onion

1 small, finely diced

Chilli, green or red

1 individual, seeds removed and finely diced

Coriander, fresh

2 tablespoon(s), roughly chopped

Lime Juice, Fresh

40 ml

Avocado

½ medium, peeled and seed removed

0% fat natural Greek yogurt

50 g

Tortilla wrap

Instructions

  1. Heat a nonstick griddle pan over a medium-high heat and mist with cooking spray. Meanwhile, combine the spices in a small bowl and add some seasoning. Dust the cod fillets with the spice mixture and griddle for 4 minutes on each side.
  2. While the fish is cooking, combine the cucumber, mango, onion, chilli, coriander and half the lime juice in a bowl and season to taste. In a separate bowl, mash the avocado until smooth and combine with the yogurt and ½ the remaining lime juice.
  3. Once the fish is cooked through, transfer to a plate and break into large flakes using two forks. Pour over the remaining lime juice and gently toss to combine. Warm the tortillas to pack instructions.
  4. Spread the avocado cream over the tortillas. Top with the flaked fish and large spoonfuls of the salsa to serve.
