Spiced cauliflower 'rice'
1 whole, trimmed and cut into florets
¼ teaspoons, level
¼ teaspoons, level, ground
1 teaspoons, level, mild
2 tablespoons, chopped
- Cut 1 trimmed cauliflower into florets, then put in a food processor. Blitz until roughly the texture of rice, then transfer to a microwave-safe bowl. Cover with a plate, leaving a small gap, then cook on high for 5-6 minutes.
- Stir through ¼ teaspoon each of garlic granules, ground cumin and ground coriander, ½ teaspoon mild chilli powder and 2 tablespoons chopped fresh coriander. Season to taste, then sprinkle over a little extra mild chilli powder to serve.
