Spiced cauliflower 'rice'

Ingredients
Cauliflower, Raw
1 whole, trimmed and cut into florets
Garlic granules
2 g
Ground Cumin
¼ teaspoon(s), level
Coriander, Dried
¼ teaspoon(s), level, ground
Chilli Powder
1 teaspoon(s), level, mild
Coriander, fresh
2 tablespoon(s), chopped
Instructions

Cut 1 trimmed cauliflower into florets, then put in a food processor. Blitz until roughly the texture of rice, then transfer to a microwave-safe bowl. Cover with a plate, leaving a small gap, then cook on high for 5-6 minutes.

Stir through ¼ teaspoon each of garlic granules, ground cumin and ground coriander, ½ teaspoon mild chilli powder and 2 tablespoons chopped fresh coriander. Season to taste, then sprinkle over a little extra mild chilli powder to serve.
