Ingredients
Honey
1½ tablespoon(s), level
Olive Oil
1 tablespoon(s)
Carrots, raw
1000 g, baby, rainbow
Garlic
8 clove(s), unpeeled
Thyme, Fresh
1 tablespoon(s), leaves
Sesame Seeds
2 teaspoon(s)
Coriander seeds
2 teaspoon(s), crushed
Instructions

Preheat the oven to 200°C, fan 180°C, gas mark 6 and line a large baking tray with baking paper. Combine 1½ tbsp clear honey and 1 tbsp olive oil in a large bowl. Add the trimmed rainbow carrots (see note) and toss to coat.

Transfer to the prepared tray along with 8 unpeeled garlic cloves. Scatter over fresh thyme leaves, sesame seeds and crushed coriander seeds.

Season well, then roast for 25-30 minutes. Serve with the garlic cloves to squeeze over.
