Ingredients

Honey

1½ tablespoon(s), level

Olive Oil

1 tablespoon(s)

Carrots, raw

1000 g, baby, rainbow

Garlic

8 clove(s), unpeeled

Thyme, Fresh

1 tablespoon(s), leaves

Sesame Seeds

2 teaspoon(s)

Coriander seeds

2 teaspoon(s), crushed

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6 and line a large baking tray with baking paper. Combine 1½ tbsp clear honey and 1 tbsp olive oil in a large bowl. Add the trimmed rainbow carrots (see note) and toss to coat.
  2. Transfer to the prepared tray along with 8 unpeeled garlic cloves. Scatter over fresh thyme leaves, sesame seeds and crushed coriander seeds.
  3. Season well, then roast for 25-30 minutes. Serve with the garlic cloves to squeeze over.

Notes

At this time of year, rainbow or heritage carrots are available in most supermarkets. But if you can’t find them, regular carrots work just as well.
