These are just as tasty eaten cold as they are hot and are ideal for a packed lunch for work or a day out. You could use pork mince, instead of beef, if you like.

Ingredients

Calorie controlled cooking spray

Extra lean beef mince (5% fat), raw

400 g

Onion

1 large, finely chopped

Red pepper

1 medium, deseeded and finely chopped

Ground Cumin

Chilli flakes

Tomato Purèe

1 tablespoon(s), level

Olives, in Brine

25 g, pitted and finely chopped

Ready rolled light puff pastry sheet

375 g

Egg, whole, raw

1 large, raw

Cucumber

½ individual, extra large, cut into half moons

Cherry Tomatoes

400 g, halved

Red onion

¼ small, finely sliced

Lemon Juice, Fresh

Instructions

  1. Mist a large pan with cooking spray and set over a medium heat. Add the beef and cook, stirring often, for 5 minutes until lightly browned. Transfer to a medium bowl.
  2. Drain any liquid from the pan, mist with more cooking spray and add the onion and red pepper. Cook for 5 minutes until just softened. Add the spices and chilli flakes and cook, stirring, for 1 minute until fragrant. Add the tomato purée and cook for another minute. Return the beef to the pan with 150ml water. Season to taste. Simmer for 5 minutes until most of the liquid has evaporated. Remove from the heat and stir in the olives. Set aside to cool.
  3. Preheat the oven to 190°C, fan 170°C, gas mark 5 and line 2 large baking trays with baking paper. Unroll the pastry sheet and lightly roll out so it’s larger. Cut into six rectangles, by cutting into thirds vertically and then in half horizontally. Place roughly one-sixth of the beef mixture on the lower half of one of the rectangles, then brush the edges with water and fold the pastry over the filling, pressing to seal, then use a fork to crimp the edges. Repeat with the remaining pastry and filling. Put the parcels on the baking trays, spaced well apart.
  4. Whisk the egg in a small bowl and brush the parcels with the egg wash, then bake for 35 minutes, until golden.
  5. To serve, toss all the salad ingredients together with the lemon juice and season to taste. Leave the parcels to cool slightly, then serve with the salad on the side.
