Enjoy these delicious pancakes anytime of the year, each pancake is 1 SmartPoint. Try serving with a dollop of 0% fat natural Greek yogurt.

Ingredients

Hamlyns Scottish Oatmeal

150 g, (use any brand)

Banana(s)

2 medium

Quark

75 g

Egg, whole, raw

2 medium, raw

Calorie controlled cooking spray

4 spray(s)

Ground Cinnamon

¼ teaspoons, level

Baking powder

¼ teaspoons, level

Mixed Spice

¼ teaspoons, level

Vanilla Extract

¼ teaspoons, level

Instructions

  1. Mix together all of the ingredients in a food processor to make a smooth batter. Allow to stand for 5-10 mins.
  2. Heat a heavy based frying pan and spray with cooking spray. Spoon the batter into small pools in the pan and cook until starting to bubble, flip over and cook until golden. Repeat with the remaining batter until you have 20 pancakes. Each pancake is 1 SmartPoint.

Notes

The pancakes can be kept in the fridge for up to 3 days, or kept frozen for 2 months.
