Sourdough, thyme & porcini stuffing

The turkey might be the star of the show, but we all know it’s what’s inside that counts! This stuffing recipe will add a little something extra to the dinner table, and will fill a 4kg turkey.


Ingredients
Dried porcini mushrooms
15 g
Olive Oil
2 teaspoon(s)
Red onion
1 small, finely chopped
Garlic
2 clove(s), crushed
Sourdough Bread
225 g, wholemeal, made into breadcrumbs
Thyme, Fresh
2 teaspoon(s), chopped
Instructions

Put the dried porcini mushrooms in a small heatproof bowl and cover with boiling water. Soak for 30 minutes, or until very soft, then drain and finely chop.

Meanwhile, heat the olive oil in a small frying pan over a medium heat. Add the finely chopped red onion and cook, stirring, for 4 minutes until soft. Add crushed garlic and cook, stirring, for 1 minute.

Combine the mushrooms, onion mixture, fresh wholemeal sourdough breadcrumbs and chopped fresh thyme in a large bowl. Season well.
