Dried Porcini Mushrooms
1 small, finely chopped
2 clove(s), crushed
225 g, wholemeal, made into breadcrumbs
2 teaspoons, chopped
- Put the dried porcini mushrooms in a small heatproof bowl and cover with boiling water. Soak for 30 minutes, or until very soft, then drain and finely chop.
- Meanwhile, heat the olive oil in a small frying pan over a medium heat. Add the finely chopped red onion and cook, stirring, for 4 minutes until soft. Add crushed garlic and cook, stirring, for 1 minute.
- Combine the mushrooms, onion mixture, fresh wholemeal sourdough breadcrumbs and chopped fresh thyme in a large bowl. Season well.
