Smoked salmon & caper butter pinwheels

- Blend 1 tsp roughly chopped capers, 1 tsp finely grated lemon zest plus 1 tsp lemon juice,1 tsp low fat spread and 60g (2oz) smoked salmon trimmings in a small processor (or use a hand blender) until it forms a rough paste. Season with some black pepper. Spread the paste over the wraps.
- Tear some watercress and scatter over the top, roll up and cut into 4 pinwheels per wrap. They can be secured with a cocktail stick.
