Don’t be afraid of using fruit in your salads. Pomegranate seeds and thin slices of apple are tasty additions, too

  1. Combine the lime juice, fish sauce, sugar and chilli in a 500ml-capacity jar with a tight-fitting lid. Stir to dissolve the sugar.
  2. Put the chicken in the jar and top with the sugar snap peas, tomatoes, mango and salad leaves. Put the lid on and secure. Keep chilled, removing from the fridge 20 minutes before eating. Turn out into a bowl and toss together to serve.
