Simple spaghetti with tuna, capers and chilli

For an easy, store cupboard supper – you can’t beat this quick-to-cook pasta dish.


Ingredients
White pasta, dry
150 g, spaghetti or linguine
Calorie controlled cooking spray
5 spray(s)
Onion
½ medium, red, finely chopped
Chilli, green or red
½ individual, deseeded and finely chopped
Tuna, raw
185 g, in brine or spring water, drained
Lemon
½ medium, juice and zest
Capers, in Brine
1 tablespoon(s), rinsed and drained
Parsley, fresh
2 tablespoon(s), flat leaf, chopped
Instructions

Cook the spaghetti in lightly salted boiling water for 8-10 minutes, or according to pack instructions.

Meanwhile, heat the cooking spray in a non-stick frying pan and gently fry the red onion and chilli until softened – about 2 minutes.

Drain the pasta and return it to the saucepan. Add the red onion, chilli, tuna, lemon zest, lemon juice, capers and parsley. Toss to mix thoroughly, then serve at once.
