Simple Salmon Patties

Give the usual salmon croquettes an upgrade by using freshly cooked salmon; it makes for a super-juicy patty. Serve the patties hot with rice or cauliflower rice and more hot sauce, if you’d like, but make sure to factor in the extra SmartPoints.®

Salmon, raw
400 g
Onion
80 g, chopped
Green pepper
75 g, chopped
Hot Pepper Sauce (Tabasco)
1 tablespoon(s)
Lemon Juice, Fresh
1 tablespoon(s)
Egg, whole, raw
1 medium, raw
Plain White Flour
2 tablespoon(s), level
Butter
2 teaspoon(s)

Preheat the oven to 220°C. Pat the fish dry and season both sides. Arrange the fillets on a small baking sheet and roast for 12-15 minutes. Then cool.

Remove and discard the fish skins, In a large bowl, flake the fish into medium-size chunks. Mix in the onion, peppers, hot sauce and lemon juice, then season. Fold in the egg and flour. Form the mixture into 4 patties then chill for 30 minutes.

In a large nonstick frying pan melt the butter over a medium high heat, swirl to coat the pan. Add the patties and cook for 3 -4 minutes until crispy and browned. Then flip the patties over and cook for 1-2 minutes.
