Ingredients

Salmon, raw

4 fillet(s), medium

Green Pesto

2 tablespoon(s), level, basil pesto

Basil, fresh

Courgette

White pasta, dry

Instructions

  1. Preheat the oven to 220°C, fan 200°C, gas mark 7. Place the salmon fillets into a baking dish and brush the top of them with the pesto, lemon zest and half the lemon juice. Cook for 6 minutes. Remove from the oven, and sprinkle with the sesame seeds. Return to the oven and cook for a further 5 minutes.
  2. Meanwhile, peel and cut the courgette into noodles. Cook the pasta to pack instructions, three minutes before the end of the cooking add the courgette noodles.
  3. Drain, then return to the pan and drizzle with olive oil and the remaining lemon juice. Stir to combine. Season, then serve with the salmon fillets and garnish with the basil.
