Seared steak, fennel & grapefruit salad

Ingredients
Beef fillet steak, lean, raw
600 g
Green or Brown Lentils, cooked
250 g
Fennel
1 individual
Dill, Fresh
1 tablespoon(s)
Grapefruit Juice
30 ml
Dijon Mustard
1 tablespoon(s), level
Vinegar, All Types
1 tablespoon(s), apple cider vinegar

Instructions

Make the dressing. Whisk all the ingredients together in a small bowl and season well. Cover with cling film and chill in the fridge.

Heat a large, nonstick frying pan over a high heat. Season the steaks then sear for 1-2 minutes each side for rare, 2-3 minutes each side for medium and 4-5 minutes each side for well-done. Remove from the pan and let rest for 5 minutes. Cut into thick strips.

Toss together the grapefruit, lentils, fennel, half the dill and the dressing. Divide between plates, top with the steak and serve garnished with the remaining dill.
